Playing with Perfect Paleo Pancakes recipe by thepaleomom. Her base recipe for plantain pancakes is awesome but…I can’t help myself…I played with it. AGAIN!! I wanted to see if I could up the protein so I added 3 tbsp of Cricket flour. I added a tsp of cinnamon also. I peeled and finely chopped a pear. I added half to the blender to puree into the batter and stirred in the other half. I added a little water to thin as it was too thick to pour. How much would depend on the juiciness of the pear. I topped it off with some pumpkin butter from Trader Joe’s.
