Hi, I’m Laura. I love to cook…I love to bake…and I love to eat. I am from a large family, in the middle of the 7 girls. I also have 5 brothers. Thus, I grew up watching and helping my mom in the kitchen. She had, and still has, lots of cookbooks. She also clipped recipes from the newspaper and magazines. She read them for enjoyment I think but I rarely saw her cook with a recipe in front of her. She seemed to use them as ideas to another creation. It must be genetic because this is what I do. This is what my sisters do. My husband has learned to ask me to write down meals he likes. He has asked me to remake something and I can’t remember exactly what I did. I have told him before “I will never again have this combination of ingredients together at one time”. But I am learning.
I came to paleo slowly. I had always eaten what I thought was a healthy diet rich in whole grains, fruits, vegetables and dairy. I ate a variety of meats. I didn’t think I had a problem with diet. I actually started out, in 2008, trying to figure out a medical problem for my husband. After doing research, I felt that yeast and bread might be causing intestinal overgrowth. I suggested that we remove all wheat products from the diet. This led us to sanitizing our kitchen of all products containing wheat and then all gluten products. Within a week of eliminating wheat, the medical issue was resolved. Several other issues that had plagued my husband also resolved. I couldn’t believe how great I felt. We continued on this way until 2 ½ years ago when I stumbled upon the Whole30.
We completed the Whole30 June 2013 and haven’t looked back. We both felt great: better than just being gluten free. I am also trying to navigate autoimmune disease. Intestinal permeability caused psoriasis and immune idiopathic thrombocytopenia. I have had food testing done through Cyrex Lab and I reacted to 48 foods tested…some were off the charts. Some of these foods are allowed on Whole30, Paleo and AIP diets. I had no reaction to some foods not allowed on them. My way of cooking has totally changed from 7 years ago…and I am learning new things all the time.
