I’ve been thinking about the Cocoa-Nut Snowballs from my blog lately; that is, I want to make them but I haven’t bought any dates in a while. Today I decided to look and see just what I did have that could be substituted. This recipe is what I came up with.
This recipe is not AIP. I have been eating a little differently since getting my Cyrex Laboratories Food Immune Reactivity Screen results. This tests measures IgG and IgA inflammatory markers for different foods. I did not react to any of the ingredients in this recipe. So, I am celebrating with these. The Paleo Mom has great information on nuts and seeds as it applies to the AIP diet.
2/3 cup walnut pieces
¼ cup cocoa powder
1 cup unsweetened dried dark sweet cherries
½ cup dried baby bananas
1 ½ tsp gluten-free vanilla
½ cup shredded unsweetened coconut
Place the first five ingredients into a food processor and process on high until the ingredients are combined and a dough starts to form. It will look grainy but there will be a sheen from the walnut oil and the dough can be formed into 1 ½ inch balls that hold together. Roll all dough into the 1 ½ inch balls; then roll them in the shredded coconut.
