Beets with Bacon
- 8 slices AIP compliant bacon
- 1/2 onion diced, preferably sweet onion variety
- 2 sweet heart beets with greens attached
Fry the bacon, over low heat, in a large skillet that has a lid. When crisp, remove to paper towels to drain. While bacon is cooking, cut the tops from the beets and wash the beet greens. Stem the leaves and chop them roughly. Peel the beets and cut into cubes. Drain off all but 1 tablespoon of the bacon fat and reserve for cooking. Add the onion and beets to the skillet and cover. Continue cooking over low heat, stirring occasionally, until the beets are tender. Add the beets greens and stir them in. Cover again and cook until the greens are wilted. Remove from heat. Crumble the bacon and stir into beets. Makes 2 large or 4 small servings.
