I wanted to make some Perfect Paleo Pancakes and bacon for breakfast. Luckily, I had thrown several green plantains in the freezer before going on vacation. I had peeled a few, chopped them into pieces and put them into the freezer an a zip lock bag. Then I ran out of time. So I threw the 3 unpeeled ones into the freezer as well. I figured I had nothing to lose. I was either throwing them out right away or possibly after vacation.
I decided to try to use the unpeeled ones. They were dark brownish black in color now. Not the green color as when I put them into the freezer. I threw them into the sink with hot water while I pulled out the rest of the ingredients for the pancakes. I actually threw the bacon package in the hot water too since that was also frozen. I didn’t wait until the plantains were totally thawed to peel them. I was hungry after all. If you have tried to peel plantains, you know it is difficult. I peel plantains by cutting the ends off first. Then I cut them in half crosswise and then each half lengthwise. At this point, I still think they are difficult but not impossible to peel. After the big freeze and thaw, they peeled the easiest I have ever experienced. I then sliced them, still partially frozen, and let them finish thawing while I started the bacon. I continued with the recipe and everything came out wonderfully.
